Glazed Butternut Squash
Peel and seed a butternut squash
Quarter lengthwise and cut in ½ inch slices
Put slices in a large saucepan
Add:
• 2/3 cup water
• ¼ cup maple syrup
• ¼ teaspoon ground nutmeg
• ¼ cup dark rum
Bring to a boil, simmer about 15 minutes or until the squash is tender
Use slotted spoon to transfer to a heated serving dish
Boil the cooking liquid until it is thickened
Pour over squash
Can garnish with chopped parsley
